Yorkshire Teabread
Fatless Fruit Cake
Ingredients:
8oz (225g) of mixed dried fruit
6 fl oz (180ml) cold strained tea
4 oz (100g) dark soft brown sugar
8 oz (225g) self raising flour
1 egg, beaten
1 -2 tsp of mixed spice (optional)

Method:
Soak the fruit in the tea overnight in a large bowl covered with a plate. If this is not possible, put the fruit in hot tea and leave for several hours or until the fruit soaks up most of the liquid.
Heat the oven to 160 degrees/gas mark 3.
Well grease or line a 1lb (450g) loaf tin.
Add the remaining ingredients to the fruit and beat well, making a slightly wet consistency.
Pour into the tin and bake for 1 hour. Test by putting a warm skewer into the middle – it will come out clean if the loaf is done.
Cool in the tin for a while and turn out and leave to cool completely……..enjoy!
