Yorkshire Teabread

Fatless Fruit Cake

Ingredients:

8oz (225g) of mixed dried fruit

6 fl oz (180ml) cold strained tea

4 oz (100g) dark soft brown sugar

8 oz (225g) self raising flour

1 egg, beaten

1 -2 tsp of mixed spice (optional)

Method: 

  • Soak the fruit in the tea overnight in a large bowl covered with a plate. If this is not possible, put the fruit in hot tea and leave for several hours or until the fruit soaks up most of the liquid.

  • Heat the oven to 160 degrees/gas mark 3.

  • Well grease or line a 1lb (450g) loaf tin.

  • Add the remaining ingredients to the fruit and beat well, making a slightly wet consistency.

  • Pour into the tin and bake for 1 hour. Test by putting a warm skewer into the middle – it will come out clean if the loaf is done.

  • Cool in the tin for a while and turn out and leave to cool completely……..enjoy!
